Mixed Pastilla Recipe

Ingredients

  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 cup cooked chicken, shredded
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 package phyllo dough
  • 1/2 cup butter, melted
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 375°F. Line a sheet pan with parchment paper.
  2. In a large skillet over medium heat, cook onion and garlic until softened.
  3. Add red and green bell peppers, carrot, and zucchini. Cook until tender, about 8 minutes.
  4. Add cooked chicken, cumin, paprika, ginger, and cinnamon. Season with salt and pepper. Cook for 5 minutes, stirring occasionally.
  5. Remove from heat and let cool slightly.
  6. Unroll phyllo dough and cut into 12-15 squares.
  7. Using a pastry brush, brush each square with melted butter.
  8. Place a spoonful of the chicken and vegetable mixture on each square and fold into triangles.
  9. Brush the triangles with more melted butter and place on the prepared sheet pan.
  10. Bake for 20-25 minutes or until golden brown.
  11. Sprinkle powdered sugar on top before serving.
