Mornay sauce: classic recipe (4 steps – 10 min)


Mornay Sauce Recipe

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Directions:

  1. In a medium-sized saucepan over medium heat, melt the butter. Add the flour, stirring constantly, until the mixture is smooth and bubbly.
  2. Gradually add the milk, whisking constantly to prevent lumps from forming. Bring the mixture to a boil, then reduce heat and simmer for about 5 minutes, stirring constantly.
  3. Add the Gruyere and Parmesan cheeses, nutmeg, salt and pepper and continue stirring until the cheese is melted and the sauce is smooth and thick.
  4. Remove from heat and serve immediately.
