Mullet with zucchini


MULLET WITH ZUCCHINI RECIPE

Ingredients:

  • 4 mullet fillets
  • 2 medium-sized zucchinis
  • 2 cloves of garlic, minced
  • 1/2 cup of white wine
  • 1/4 cup of vegetable or chicken broth
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Use a paper towel to pat the mullet fillets dry. Season them with salt and pepper, to taste, on both sides.
  2. Cut the zucchinis into half-inch slices. Heat the olive oil in a large skillet over medium-high heat. Add the zucchini slices to the skillet and cook for about 3-4 minutes, or until they start to brown.
  3. Add the minced garlic to the skillet, and stir for about 30 seconds, making sure not to burn it.
  4. Add the white wine and broth to the skillet. Stir for about a minute, then add the butter. Allow everything to cook for another 1-2 minutes until the sauce starts to thicken.
  5. While the sauce is cooking, heat a separate non-stick skillet over medium-high heat. Once the skillet is hot, add the mullet fillets, skin side down. Gently press down on the fillets to make sure they are in contact with the skillet. Cook for 3-4 minutes on this side, without flipping them over yet.
  6. Once the sauce has thickened, season it with salt and pepper to taste. If the skillet with the mullet is too hot, reduce the heat to medium. Using a spatula, gently flip the fillets over, and cook for another 3-4 minutes on the other side, or until the fish is cooked through.
  7. Divide the cooked zucchini slices on plates. Place the cooked mullet fillets on top of the zucchini. Drizzle the sauce over the top of the fish. Garnish with fresh parsley, if desired.

Serving suggestions:
