Recipe: Mussels with Tomato and Chorizo
Ingredients:
- 2 pounds fresh mussels, cleaned and debearded
- 1 can diced tomatoes (14.5 ounces)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small chorizo, sliced into rounds
- 1/4 cup white wine
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon red pepper flakes
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium heat. Add garlic, onion and chorizo; sauté until the onion is translucent and the chorizo is browned, about 5 minutes.
- Add diced tomatoes, red pepper flakes, salt and pepper to the pot and stir. Simmer for 10-15 minutes, stirring occasionally.
- Add white wine and mussels to the pot and turn the heat to high. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that stay closed.
- Sprinkle parsley over the top of the mussels and serve with crusty bread.
