Mussels with tomato and chorizo


Recipe: Mussels with Tomato and Chorizo

Ingredients:

  • 2 pounds fresh mussels, cleaned and debearded
  • 1 can diced tomatoes (14.5 ounces)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small chorizo, sliced into rounds
  • 1/4 cup white wine
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add garlic, onion and chorizo; sauté until the onion is translucent and the chorizo is browned, about 5 minutes.
  2. Add diced tomatoes, red pepper flakes, salt and pepper to the pot and stir. Simmer for 10-15 minutes, stirring occasionally.
  3. Add white wine and mussels to the pot and turn the heat to high. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that stay closed.
  4. Sprinkle parsley over the top of the mussels and serve with crusty bread.
