Grandma’s Sorrel Soup Recipe

Ingredients:

  • 1 pound sorrel leaves, washed and chopped
  • 1 large onion, diced
  • 1 large carrot, peeled and diced
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • Salt and pepper, to taste

Instructions:

  1. Melt butter in a large soup pot over medium heat.
  2. Add onion, carrot, and garlic and cook until vegetables are soft, stirring occasionally.
  3. Add chopped sorrel leaves and cook until they wilt, stirring occasionally, about 10 minutes.
  4. Add broth and bring the mixture to a boil, then reduce to a simmer and cook until the vegetables are tender, about 20 minutes.
  5. Remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, you can puree the soup in batches using a regular blender.
  6. Return the pot to the stove over medium heat. Whisk together flour and heavy cream in a small bowl until smooth, then gradually add the mixture to the pot, whisking constantly until the soup is thickened, about 5 minutes.
  7. Season with salt and pepper to taste, and serve hot.

Verdict:

Grandma’s sorrel soup is a delicious and nutritious treat that’s perfect for any season. The tangy, lemony flavor of the sorrel pairs perfectly with the creamy texture of the soup, making for a satisfying and flavorful dish that will warm you up from the inside out. Serve as a starter or main course, garnished with a dollop of sour cream and some crusty bread for dipping.

Enjoy!
