My Grandmother’s Waffles

Ingredients:

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 eggs, separated
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. In a medium bowl, whisk together the egg yolks, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold the beaten egg whites into the batter until just incorporated.
  6. Preheat a waffle iron to medium-high heat and lightly grease with cooking spray or butter.
  7. Pour about 1/2 cup of the batter onto the center of the heated waffle iron and cook until golden brown, about 3-4 minutes.
  8. Repeat with remaining batter, greasing the waffle iron as needed.
  9. Serve hot with butter and syrup, if desired.
