Nicoise salad


Nicoise Salad Recipe

Ingredients:

  • 1 lb of baby potatoes
  • 1/2 lb of green beans, trimmed
  • 4 hard-boiled eggs, peeled and quartered
  • 1/2 red onion, thinly sliced
  • 1/2 cup of Kalamata olives, pitted
  • 1 can of tuna, drained and flaked
  • 1/4 cup of capers, drained
  • 1 head of butter lettuce, washed and dried
  • Salt and black pepper, to taste

Dressing:

  • 3 tablespoons of Dijon Mustard
  • 1/4 cup of red wine vinegar
  • 1/2 cup of olive oil
  • Salt and black pepper, to taste

Directions:

  1. Wash and scrub the baby potatoes, and add them to a medium pot with lightly salted water. Bring it to a boil and cook until the potatoes are tender, about 12-15 minutes. Remove them from the pot and set them aside to cool.
  2. In the same pot, cook the green beans for 3-4 minutes until tender-crisp. Drain the water and place the green beans in a bowl of ice water to stop the cooking process. Drain them again and set aside.
  3. In a small bowl, whisk together the ingredients for the dressing until emulsified. Season with salt and black pepper to taste.
  4. Arrange the lettuce leaves on a large serving platter, and drizzle with the prepared dressing.
  5. Arrange the cooked potatoes, green beans, sliced onions, olives, tuna and capers over the lettuce. Season with salt and black pepper, to taste.
  6. Top the salad with the quartered hard-boiled eggs.
  7. Drizzle with additional dressing and serve.
