Nicoise Salad Recipe
Ingredients:
- 1 lb of baby potatoes
- 1/2 lb of green beans, trimmed
- 4 hard-boiled eggs, peeled and quartered
- 1/2 red onion, thinly sliced
- 1/2 cup of Kalamata olives, pitted
- 1 can of tuna, drained and flaked
- 1/4 cup of capers, drained
- 1 head of butter lettuce, washed and dried
- Salt and black pepper, to taste
Dressing:
- 3 tablespoons of Dijon Mustard
- 1/4 cup of red wine vinegar
- 1/2 cup of olive oil
- Salt and black pepper, to taste
Directions:
- Wash and scrub the baby potatoes, and add them to a medium pot with lightly salted water. Bring it to a boil and cook until the potatoes are tender, about 12-15 minutes. Remove them from the pot and set them aside to cool.
- In the same pot, cook the green beans for 3-4 minutes until tender-crisp. Drain the water and place the green beans in a bowl of ice water to stop the cooking process. Drain them again and set aside.
- In a small bowl, whisk together the ingredients for the dressing until emulsified. Season with salt and black pepper to taste.
- Arrange the lettuce leaves on a large serving platter, and drizzle with the prepared dressing.
- Arrange the cooked potatoes, green beans, sliced onions, olives, tuna and capers over the lettuce. Season with salt and black pepper, to taste.
- Top the salad with the quartered hard-boiled eggs.
- Drizzle with additional dressing and serve.
