Normandy apple and almond tart

Normandy Apple and Almond Tart Recipe

Ingredients:

  • 1 sheet puff pastry, thawed
  • 3 Granny Smith apples, peeled and thinly sliced
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg, beaten
  • 1/2 cup almond meal
  • 1/4 cup all-purpose flour
  • 1/4 cup apricot jam

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface until it is big enough to fit your tart pan. Use the pastry to line your tart pan, pressing the pastry into the corners and leaving the excess hanging over the sides. Set the pastry-lined tart pan in the fridge to chill while you prepare the filling.
  3. In a large bowl, cream the butter and granulated sugar together until pale and smooth. Stir in the beaten egg until well combined.
  4. Stir in the almond meal and all-purpose flour until well combined. The mixture should be thick and paste-like.
  5. Spread the almond mixture evenly over the bottom of the chilled pastry. Arrange the apple slices on top of the almond mixture in concentric circles or another design of your choosing.
  6. Bake the tart in your preheated oven until the pastry is golden brown and the apples are tender, about 30 minutes.
  7. Meanwhile, heat the apricot jam in a small pot over low heat until it becomes thin and spreadable.
  8. Remove the tart from the oven and brush the warm apricot jam over the top of the apples to give them a glossy finish.
  9. Allow the tart to cool in the pan for a few minutes before carefully removing it from the pan and slicing it into wedges.

Verdict:

This Normandy apple and almond tart is the perfect combination of sweet and tart flavors. The puff pastry is flaky and buttery, while the almond cream adds richness and the thinly sliced apples give freshness and texture to the tart. The apricot jam on top of the tart gives a little bit of sweetness and shine to the apples, making them look and taste even more delicious. The end result is an impressive and elegant looking dessert that is perfect for any occasion.

Serving Suggestions:

This tart is best served warm with a dollop of whipped cream or a scoop of vanilla ice cream. It also goes well with a cup of coffee or tea, making it the perfect afternoon treat.
