Ingredients:
- 1 pork tenderloin (about 1 lb)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup orange juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 2 teaspoons cornstarch
- 2 tablespoons water
- Orange slices for garnish (optional)
Directions:
- Preheat the oven to 375°F (190°C).
- Season the pork tenderloin with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the pork tenderloin and brown on all sides, about 5 minutes in total.
- In another bowl, whisk together orange juice, honey, soy sauce, and minced garlic.
- Transfer the pork tenderloin to a baking dish and pour the orange juice mixture over the pork. Cover the dish with foil.
- Bake the pork for 20 minutes in the preheated oven.
- Remove the foil from the baking dish. Bake for another 10-15 minutes, until the pork reaches an internal temperature of 145°F (63°C).
- Remove the pork from the baking dish and let it rest for 5 minutes. Slice the pork tenderloin against the grain into 1/4 inch thick slices.
- In a small bowl, mix together the cornstarch and water. Add the mixture to the baking dish with the remaining glaze. Cook for a few minutes over medium heat until the glaze has thickened.
- Arrange the sliced pork on a serving platter and spoon some of the glaze over it. Serve hot, garnished with orange slices if desired.
