I recently had the opportunity of hosting one of my Culinary Coaching Events at my home and two of the guest were Jay and Karen Osmond. I was delighted to get to know them. I grew up with the Osmond’s music and have met Alan and his sweet wife Suzanne before. It was a wonderful evening. Jay asked if I would be willing to do a life FaceBook with him the next morning. I felt honored and we had a wonderful time. We enjoyed working together so much that we scheduled another one. We decided to do Mother Osmond’s recipes. Olive published a cookbook so we did three recipes out of her cookbook.
I love baking her bread recipe. It is a whole grain bread sweetened with honey and molasses. Filled with whole grain goodness. My favorite type of bread. We also transformed her Paprika Chicken recipe to the pressure cooker/instant pot and it was wonderful. To top it off we did a simple salad recipe that was Jay’s favorite growing up. It was a wonderful.
Food is amazing and sharing it with others is a joy. It always amazes me how quickly friends are developed over food. Perhaps the reason is we actually slow down a moment to take the time to connect. I think most humans are social and love to connect, we just move to fast to take the time to really connect. Just spending a couple hours with Jay and Karen has created a life time friendship. You really get to know people when you cook with them.
I had no idea that Jay has written a play about his experience growing up with the Osmond family. It actually launches in the UK in February of 2022 and is already sold out. They are huge in UK and have plans to bring the play to the US. I learned a lot about his family and enjoyed getting to know him and Karen. She is delightful in every way. So loving and social. The two are a power team and it is evident how much they love each other.
It was a great experience cooking with them and especially sharing Fond Food Memories with them. And we actually created a few of our own new Fond Food Memories.

Recipes From Olive Osmond’s Cookbook Updated by Chef Brad
Seven Grain Bread Recipe
Grind the following in your wheat grinder or high powered blender
2 cups whole wheat kernels
1 cup triticale, if you can’t find use oat groats or quinoa
1 cup rye
1 cup millet
1 cup barkey
1/2 cup yellow corn or pop corn
1/2 cup uncooked brown rice
In you mixer place the following and knead for six minutes Please read instructions carefully below.
Ground up grains
5 1/2 cups hot water
1/3 cup honey
1/3 cup molasses
2 tablespoons salt
1/4 cup olive oil
3 tablespoon instant yeast
5 to 6 cups high gluten white flour
Place all ingredients with only half the white flour in your mixer. Place the yeast on top of the white flour and turn on your mixer adding more flour until dough pulls away from the sides of the bowl. Do not dump all the flour in at once. Your mixer will let you know when you have enough flour. Doing it with way allows you to have a nice whole grain loaf that is light and airy. Knead for six minutes in your mixer (I use the WonderMix) Remove from mixer bowl and divide bread into 5 equal pieces and place in oiled bread pans and let rise to double. Bake in and 350 degree oven for 25 minutes or until done. Enjoy.
Olive’s Paprika Chicken Recipe
This recipe was traditionally prepared by Olive for her family. She didn’t have the modern convince of an electric pressure cooker so she cooked it stove top in a large sauté pan. Her method took about one hour cooking time. This recipes with the electric pressure cooker took total of 20 minutes to prepare and it was amazing. Pressure cookers bring out the flavors and the meat of tender.
Chicken pieces, 8 pieces , I used skinless thighs
1 large chopped onion
1 green bell pepper chopped
1/3 cup olive oil
2 cups water
3/4 cup whole grain flour
3 tablespoons spanish paprika
2 teaspoons each salt and pepper
1 cup sour cream
In a bowl place flour, paprika, salt and pepper and mix well. In your pressure cooker turned on high place oil and sauté onions and peppers for 2 to 3 minutes. Dredge chicken in flour mixture and moving onions and peppers aside in cooker place chicken in oil. Top all chicken with peppers and onions and add water and remaining flour. Mix and place lid on pressure cooker and pressure for 14 minutes. Natural release, meaning let pressure go down naturally.

Jay’s Einstein Salad Recipe
Apparently when Jay was a boy Olive would make this salad and Jay would ask why she put bean sprouts in the salad. Olive told him it was for the enzymes in the salad. Jay called them Einsteins and thus the name of the salad.
1 large head of Ice Burg lettuce
2 celery stalks
2 cucumbers
2 carrots
1 large turnip
6 radishes
2 cups bean sprouts for the Einsteins
Roquefort Dressing, Enough to make it good
Chop lettuce in inch pieces and place in large bowl. Add the sprouts and Chop all remaining vegetables into small pieces. Toss with dressing and enjoy
