Ingredients:

  • 8 oz. rice noodles
  • 2 tbsp. vegetable oil

  • 2 eggs, lightly beaten
  • 1/2 cup roasted peanuts, chopped
  • 1 cup bean sprouts

  • 2 tbsp. sugar
  • 1 tsp. chili flakes
  • Lime wedges, for serving

Instructions:

  1. Bring a large pot of water to boil. Add the rice noodles and cook until tender, about 3-5 minutes. Drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the shrimp and cook until pink and cooked through, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  4. Add the tofu to the skillet and cook until lightly browned, about 2-3 minutes.
  5. Pour the beaten eggs into the skillet and scramble until cooked, about 2-3 minutes.
  6. Add the cooked noodles to the skillet, along with the roasted peanuts, bean sprouts, and green onions. Toss to combine.
  7. In a small bowl, whisk together the fish sauce, rice vinegar, sugar, and chili flakes. Pour the sauce over the noodles and toss to coat.
  8. Return the cooked shrimp to the skillet and toss to combine.
  9. Divide the Pad Thai between plates and serve with lime wedges.
