Panini-Style Hot Sandwich: Chicken Pesto

Ingredients:

  • 4 Boneless skinless chicken breasts
  • 1 Cup of pesto sauce
  • 8 Slices of mozzarella cheese
  • 8 Slices of tomato
  • 8 Slices of red onion
  • 8 Slices of ciabatta bread
  • 2 Tablespoons of olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place chicken breasts on a baking sheet and cover with pesto sauce.
  3. Bake for 30-35 minutes until fully cooked.
  4. Slice cooked chicken breasts into strips.
  5. Preheat a panini grill or a large non-stick frying pan over medium heat.
  6. Spread a thin layer of olive oil on each slice of ciabatta bread before placing on the grill or frying pan.
