Parmentier of Cod with Chorizo Recipe

Ingredients:

  • 2 cod fillets
  • 4 potatoes, peeled and diced
  • 1 red onion, finely chopped
  • 1 chorizo sausage, diced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200ºC.

  8. Finish with a final layer of mashed potatoes on top of the cod.
  9. Bake in the oven for 25-30 minutes or until the top is golden and crispy.
  10. Sprinkle some fresh parsley on top before serving.
