Pasteis de Nata (Portuguese Custard Tarts)
Ingredients:
- 1 sheet of puff pastry
- 1 cup of sugar
- 1/2 cup of water
- 1/2 cup of milk
- 3 egg yolks
- 1/4 cup of flour
- 1 teaspoon of vanilla extract
- Cinnamon powder
Instructions:
- Preheat the oven to 450°F (240°C).
- Roll out the puff pastry sheet on a floured surface and cut it into 12 circles using a cookie cutter or a small cup.
- Place the circles into a muffin tin, pressing them down to mold the dough evenly and with no cracks.
- In a saucepan, heat the sugar and water until it forms a syrup. Let it cool for a bit while you mix the other ingredients on step 5.
- In a separate bowl, whisk together the egg yolks, flour, and vanilla extract.
- Add the milk into the egg mixture and stir well.
- Slowly pour the syrup into the mixture while stirring constantly.
- Pour the mixture into the puff pastry cups, filling them about 2/3 of the way.
- Bake the tarts for about 20 minutes or until the edges are browned and the custard is set, but still jiggly in the center. Check them regularly as cooking times may vary depending on your oven.
- Once the Pasteis de Nata are done, remove them from the oven and let them cool down to room temperature. Then sprinkle some cinnamon powder on top.
- You can serve them straight away or store them in the fridge for later. They can be enjoyed cold or slightly warmed up in the oven/microwave.
