Peach-Currant Jam Recipe

Ingredients:

  • 4 cups fresh peaches, peeled and chopped
  • 2 cups fresh currants, stemmed and washed
  • 2 cups granulated sugar
  • 1/4 cup lemon juice

Instructions:

  1. Combine the chopped peaches and currants in a large, heavy pot.
  2. Add the sugar and stir to combine.
  3. Cook the mixture over medium heat until the sugar has dissolved, stirring occasionally to prevent sticking and burning.
  4. Once the sugar has dissolved, increase the heat to medium-high and bring the mixture to a boil.
  5. Reduce the heat to low and let the mixture simmer for about 45 minutes, or until thickened to your desired consistency.
  6. Stir in the lemon juice and cook for an additional 10 minutes.
  7. Remove the pot from the heat and let the jam cool slightly.
  8. Using a ladle, transfer the jam to sterilized jam jars and seal tightly with lids. Store in the fridge for up to 2 months.
