Peach Fudge Recipe
Ingredients:
- 2 cups granulated sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 2 cups white chocolate chips
- 1 cup peach puree
- 1 tsp vanilla extract
- 1/2 tsp salt
- Additional peach puree for swirls (optional)
Instructions:
- Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
- In a heavy bottomed saucepan, combine the sugar, heavy cream, butter and corn syrup over medium heat, stirring until the sugar dissolves.
- Bring the mixture to a boil and continue to stir for 5-7 minutes or until the mixture reaches 238°F on a candy thermometer.
- Remove from heat and add the white chocolate, peach puree, vanilla extract, and salt, stirring until everything is melted and incorporated.
- At this point, you can add extra swirls of peach puree if desired.
- Pour the mixture into the prepared dish and smooth out the top with a spatula.
- Let it cool at room temperature for at least 2 hours, then refrigerate until set, for another 2 hours or overnight.
- Once set, lift the fudge out of the dish using the parchment paper and transfer to a cutting board.
- Cut into small squares and serve.
