Peach Fudge Recipe

Ingredients:

  • 2 cups granulated sugar
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 2 cups white chocolate chips
  • 1 cup peach puree
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Additional peach puree for swirls (optional)

Instructions:

  1. Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a heavy bottomed saucepan, combine the sugar, heavy cream, butter and corn syrup over medium heat, stirring until the sugar dissolves.
  3. Bring the mixture to a boil and continue to stir for 5-7 minutes or until the mixture reaches 238°F on a candy thermometer.
  4. Remove from heat and add the white chocolate, peach puree, vanilla extract, and salt, stirring until everything is melted and incorporated.
  5. At this point, you can add extra swirls of peach puree if desired.
  6. Pour the mixture into the prepared dish and smooth out the top with a spatula.
  7. Let it cool at room temperature for at least 2 hours, then refrigerate until set, for another 2 hours or overnight.
  8. Once set, lift the fudge out of the dish using the parchment paper and transfer to a cutting board.
  9. Cut into small squares and serve.
