Pear-Almond Muffins Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 ripe pears, peeled, cored and diced

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with muffin liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder and salt.
  3. In a separate bowl, whisk together the melted butter, milk, egg and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced pears.
  6. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 of the way full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  8. Remove the muffins from the oven and allow them to cool in the tin for 5 minutes.
  9. Transfer the muffins to a wire rack to cool completely before serving.
