Ingredients

  • 6-8 ripe pears, peeled, cored and halved
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 sheet of puff pastry, thawed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a 9-inch oven-safe skillet, melt the butter over medium heat.
  3. Add the sugar and cook until the mixture turns a caramel color, stirring constantly, about 10 minutes.
  4. Take the skillet off the heat and add the vanilla extract.
  5. Arrange the pear halves, cut-side down, in the caramel mixture.
  6. Roll out the puff pastry sheet to fit over the top of the skillet. Place it over the pears and tuck the edges around the fruit.
  7. Use a knife to score the top of the pastry in a few places to allow steam to escape.
  8. Bake for 25-30 minutes or until the pastry is golden brown and puffed up.
  9. Remove the skillet from the oven and let it cool for 5 minutes.
  10. To serve, carefully invert the skillet onto a serving plate and remove the skillet. Cut into wedges to serve.
