Pepper Cream Recipe

Ingredients

  • 2 red bell peppers
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup heavy cream
  • Salt to taste

Directions

  1. Preheat oven to 400°F.
  2. Place the bell peppers on a baking sheet and roast for 20-25 minutes or until the skins start to blacken. Remove from oven and let cool.
  3. While the peppers are cooling, melt the olive oil and butter in a saucepan over medium heat.
  4. Add the chopped onion and minced garlic. Cook, stirring frequently, until the onion is translucent (6-8 minutes).
  5. Add the paprika and cayenne pepper to the saucepan and stir.
  6. Remove the skins and seeds from the roasted peppers. Add the peppers to the saucepan. Cook for 5 minutes.
  7. Add the heavy cream and stir. Cook for 5 minutes.
  8. Using an immersion blender, blend the mixture until smooth.
  9. Add salt to taste.
  10. Serve hot.
