Pesto muffins


Pesto Muffins Recipe

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup pesto
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup olive oil
  • 1/4 cup grated parmesan cheese

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together flour, baking powder, and salt.
  3. In a separate bowl, whisk together pesto, milk, eggs, and olive oil.
  4. Pour the wet mixture into the dry mixture and stir until just combined.
  5. Stir in grated parmesan cheese.
  6. Spoon batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes before removing muffins from the tin and transferring them to a wire rack to cool completely.

Serving suggestions:

Serve the pesto muffins as a savory breakfast or brunch item alongside eggs, bacon, or sausage. Alternatively, they make a great side dish for lunch or dinner, especially with a hearty soup or salad. They can also be enjoyed as a snack on their own or topped with additional pesto or cheese.
