Pesto Muffins Recipe
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup pesto
- 1/2 cup milk
- 2 eggs
- 1/4 cup olive oil
- 1/4 cup grated parmesan cheese
Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together flour, baking powder, and salt.
- In a separate bowl, whisk together pesto, milk, eggs, and olive oil.
- Pour the wet mixture into the dry mixture and stir until just combined.
- Stir in grated parmesan cheese.
- Spoon batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes before removing muffins from the tin and transferring them to a wire rack to cool completely.
