Pie with Porcini Mushrooms and Chicken

Ingredients:

  • 1 pound of chicken breast, diced
  • 1/2 pound of porcini mushrooms, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1/4 cup of flour
  • 1/2 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1/4 cup of white wine
  • 1 tbsp of fresh thyme, chopped
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten

Instructions:

  1. Preheat oven to 400°F/200°C and line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pan and set aside.
  3. Add the onion and garlic to the skillet and sauté until onions are softened, about 3 minutes. Add the mushrooms and continue cooking until they are softened, about 5 minutes.
  4. Sprinkle flour over the mushrooms and onions and stir to combine. Cook for 1-2 minutes.
  5. Gradually add chicken broth, heavy cream and white wine, stirring constantly until the sauce thickens. Stir in thyme, salt and pepper. Add the chicken back into the skillet and stir until it is well coated with the sauce.
  6. Unfold the puff pastry sheet on a lightly floured surface and roll it out to a thickness of approximately 1/8 inch. Cut the pastry sheet in half and place one half on the lined baking sheet. Spoon the chicken and mushroom mixture onto the pastry base, spreading it out evenly.
  7. Place the other half of the puff pastry on top of the chicken and mushroom mixture. Press the edges of the pastry together to seal and use a fork to press down on the edges.
  8. Cut a few diagonal slashes in the top of the pie to allow steam to escape. Brush the beaten egg all over the top of the pie.
  9. Bake for 25-30 minutes or until the pastry is golden brown and the filling is bubbling.
  10. Let the pie cool for a few minutes before cutting and serving.
