Pistachio Flan Recipe

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 4 large eggs
  • 1/2 cup unsalted pistachios, finely ground
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In a saucepan, combine the sugar and water over medium heat. Cook, stirring constantly until the sugar dissolves and the mixture turns a golden brown color.
  3. Pour the hot caramel into a 9-inch flan pan, tilting the pan around so that the caramel coats the bottom and halfway up the sides. Set aside to cool.
  4. In a mixing bowl, whisk together the milk, cream, eggs, ground pistachios, and vanilla extract.
  5. Pour the mixture into the flan pan with caramel in it.
  6. Place the flan pan onto a baking sheet, and then carefully pour hot water into the baking sheet until it reaches halfway up the flan pan. This is called a water bath.
  7. Bake in the preheated oven for 60-65 minutes, or until a toothpick comes out clean when inserted into the center.
  8. Remove the flan from the oven and let it cool at room temperature. Once cooled, refrigerate for a minimum of 2 hours.
  9. To serve, run a knife around the edges of the flan and invert onto a serving plate. Serve cold.
