Poirat Recipe
Description

Ingredients
- 4 pears
- 1 eggplant
- 1 zucchini
- 1 yellow squash
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 garlic cloves
- 1 can of crushed tomatoes
- 1 tbsp of olive oil
- 1 tsp of dried thyme
- 1 tsp of dried rosemary
- 1 tsp of salt
- 1 tsp of black pepper
Directions
- Peel and core the pears, then cut them into halves. In a large saucepan, bring water to a boil then simmer the pears for 15 minutes or until they are soft.
- Meanwhile, chop the eggplant, zucchini, yellow squash, red and green bell peppers, onion and garlic into small pieces.
- In another large saucepan, heat olive oil over medium heat then add onion and garlic. Saute until fragrant for about 2-3 minutes.
- Add the chopped vegetables, crushed tomatoes, dried thyme and rosemary, 1 tsp of salt and 1 tsp of black pepper. Mix well and cook for about 10 minutes or until the vegetables are soft.
- Place the poached pears on a serving dish and spoon the ratatouille mixture on top of the pears.
- Serve warm and enjoy!
