Ingredients

  • 4 pears
  • 1 eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 garlic cloves
  • 1 can of crushed tomatoes
  • 1 tbsp of olive oil
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • 1 tsp of salt
  • 1 tsp of black pepper

Directions

  1. Peel and core the pears, then cut them into halves. In a large saucepan, bring water to a boil then simmer the pears for 15 minutes or until they are soft.
  2. Meanwhile, chop the eggplant, zucchini, yellow squash, red and green bell peppers, onion and garlic into small pieces.
  3. In another large saucepan, heat olive oil over medium heat then add onion and garlic. Saute until fragrant for about 2-3 minutes.
  4. Add the chopped vegetables, crushed tomatoes, dried thyme and rosemary, 1 tsp of salt and 1 tsp of black pepper. Mix well and cook for about 10 minutes or until the vegetables are soft.
  5. Place the poached pears on a serving dish and spoon the ratatouille mixture on top of the pears.
  6. Serve warm and enjoy!
