Polenta Bites Recipe

Ingredients:

  • 1 cup of polenta
  • 3 cups of water
  • 1 teaspoon of salt
  • 1 tablespoon of butter
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 1/4 teaspoon of black pepper
  • 1/4 cup of olive oil

Instructions:

  1. In a large pot, bring the water to a boil and slowly add the polenta, stirring constantly.
  2. Turn the heat down to low and continue to stir for about 10-15 minutes until the polenta has thickened and starts to pull away from the side of the pot.
  3. Add in the butter, Parmesan cheese, parsley, salt, and black pepper, and stir until well combined.
  4. Spread the polenta into a greased 9×13 inch baking dish, and let it cool completely.
  5. Preheat the oven to 375°F and cut the cooled polenta into bite-sized cubes.
  6. Coat each cube in olive oil and place them on a baking sheet.
  7. Bake for 15-20 minutes or until golden brown and crispy.
  8. Remove from the oven and serve immediately.
