Potato Salad for Christmas

Ingredients:

  • 5-6 medium sized potatoes, boiled, peeled and cubed
  • 2 hard boiled eggs, chopped
  • 1 small onion, finely chopped
  • 2-3 pickles, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp mustard
  • 2 tbsp white vinegar
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the cubed potatoes, chopped eggs, chopped onions and pickles.
  2. In a separate bowl, mix together the mayonnaise, sour cream, mustard, vinegar, salt and pepper to make the dressing.
  3. Pour the dressing over the potato mixture and toss everything together until fully coated.
  4. Cover and refrigerate for at least an hour before serving.
