Potatoes with Tomato Sauce Recipe

Ingredients:

  • 4-6 Potatoes, peeled and cubed
  • 1 Onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 Tomatoes, chopped
  • 2 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 2 cups Water
  • 2 tbsp Olive oil

Instructions:

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onions and sauté for 2-3 minutes, or until they become soft and translucent.
  3. Add garlic and sauté for another 30 seconds, or until fragrant.
  4. Add the chopped tomatoes and tomato paste and stir well.
  5. Add the cubed potatoes, paprika, dried oregano, salt, and black pepper.
  6. Add water and stir well.
  7. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.

  9. Remove from heat and let it cool for a few minutes before serving.
