Pounti from Auvergne Recipe

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh savory
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh thyme
  • 1/4 cup chopped fresh marjoram
  • 1/4 cup chopped fresh rosemary
  • 2 tablespoons olive oil
  • 1/2 pound cooked ham, chopped
  • 1/2 pound Swiss chard, chopped
  • 1/2 cup milk
  • 4 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine flour and cornmeal.
  3. Stir in onion, garlic, parsley, chives, savory, mint, basil, thyme, marjoram, rosemary, olive oil, ham, and Swiss chard.
  4. In a separate bowl, beat together milk, eggs, salt, and black pepper. Pour over flour mixture, and stir until well blended.
  5. Pour batter into prepared baking dish.
  6. Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into center of the loaf comes out clean.
  7. Cool for 10 minutes before serving.
