Provençal Squid Recipe

Ingredients:

  • 1 lb. squid, cleaned and sliced into rings
  • 2 tbsp. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (14 oz.) diced tomatoes with juice
  • 1/4 cup dry white wine
  • 1 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. chopped fresh parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and sauté for 2-3 minutes until the onions are softened.
  2. Add the bell peppers and sauté for another 2-3 minutes until the peppers are softened.
  3. Add the diced tomatoes with juice, white wine, oregano, thyme, cayenne pepper, salt, and black pepper and stir to combine.
  4. Add the squid and gently stir to coat in the sauce.
  5. Cover the skillet and simmer for 10-15 minutes until the squid is cooked through and tender.
  6. Stir in the chopped parsley and serve hot with crusty bread, rice, or pasta.
