Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup pitted and chopped prunes
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9×13 inch (23×33 cm) baking dish.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Using a standing or handheld electric mixer, beat the butter until creamy. Add the eggs, one at a time, mixing well after each addition.
  4. Add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients.
  5. Stir in the chopped prunes and vanilla extract.
  6. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool completely in the pan before slicing and serving.
