Puff Pastry with Vegetables Recipe

Ingredients:

  • 1 puff pastry sheet
  • 1/2 cup red onion, chopped
  • 1/2 cup bell peppers, chopped
  • 1/2 cup zucchini, chopped
  • 1/2 cup eggplant, chopped
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil
  • 1 egg, beaten

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium-high heat and sauté the garlic until fragrant. Then add the onions and cook until softened.
  3. Add the bell peppers, zucchini, and eggplant. Sauté until they are slightly tender, for about 5 minutes.
  4. Season with oregano, salt, and black pepper. Set aside to cool.
  5. Cut the puff pastry sheet in half. Scoop the cooled veggies on top of one half.
  6. Brush the edges with beaten egg. Cover with the other half of the puff pastry sheet.
