Puff Pastry with Vegetables Recipe
Ingredients:
- 1 puff pastry sheet
- 1/2 cup red onion, chopped
- 1/2 cup bell peppers, chopped
- 1/2 cup zucchini, chopped
- 1/2 cup eggplant, chopped
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. olive oil
- 1 egg, beaten
Instructions:
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium-high heat and sauté the garlic until fragrant. Then add the onions and cook until softened.
- Add the bell peppers, zucchini, and eggplant. Sauté until they are slightly tender, for about 5 minutes.
- Season with oregano, salt, and black pepper. Set aside to cool.
- Cut the puff pastry sheet in half. Scoop the cooled veggies on top of one half.
- Brush the edges with beaten egg. Cover with the other half of the puff pastry sheet.
- Seal the edges by pressing them together with a fork. Brush the top of the pastry with more beaten egg.
- Make small slits on the pastry to let the steam out. This will make the pastry rise and cook evenly.
- Bake at 400°F (200°C) for 20-25 minutes or until the pastry is golden brown and puffed up.
- Remove from the oven and let it cool for 5 minutes. Serve warm.
