Pulp Salad Recipe

Ingredients:

  • 2 cups mixed pulp (from juicing)
  • 1 large carrot, peeled and grated
  • 1 bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the mixed pulp, grated carrot, chopped bell pepper, and sliced red onion. Toss together with your hands to mix well.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss again to coat all the ingredients evenly.
  4. Top with crumbled feta cheese and chopped parsley.
  5. Chill in the refrigerator for at least 30 minutes before serving.
