Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Oil or butter for greasing skillet or griddle

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  4. Heat a large skillet or griddle over medium-high heat and grease with oil or butter.
  5. Ladle 1/4 cup of pancake batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, about 2 minutes. Flip and cook for another minute or until the other side is lightly browned.
  7. Repeat until all the batter is used up.
