Ingredients
- 1 pound rabbit meat, ground
- 2 tablespoons olive oil
- 1 cup onion, diced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1/2 cup red wine
- 1 can (28 ounces) crushed tomatoes

- 1 pound pasta of your choice

Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add onion, carrots, celery, and garlic. Cook until the vegetables are soft and the onion is translucent.
- Add the ground rabbit meat to the saucepan and cook until browned.
- Add tomato paste and red wine. Cook for a few minutes, stirring constantly.
- Add crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
- Cook pasta according to package instructions, until al dente.
- Drain pasta and return it to the pot.
- Add the rabbit bolognese sauce to the pot with the pasta. Toss until the pasta is coated in the sauce.
- Serve hot with grated Parmesan cheese on top.
