Ingredients

  • 1 pound rabbit meat, ground
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/2 cup red wine
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 pound pasta of your choice
  • 1/4 cup grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until the vegetables are soft and the onion is translucent.
  3. Add the ground rabbit meat to the saucepan and cook until browned.
  4. Add tomato paste and red wine. Cook for a few minutes, stirring constantly.
  5. Add crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
  6. Cook pasta according to package instructions, until al dente.
  7. Drain pasta and return it to the pot.
  8. Add the rabbit bolognese sauce to the pot with the pasta. Toss until the pasta is coated in the sauce.
  9. Serve hot with grated Parmesan cheese on top.
