Rabbit in the oven with beer sauce

Ingredients:

  • 2 pounds rabbit, cut into pieces
  • 4 tablespoons flour
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 2 cups beef broth
  • 1 cup beer
  • 1 tablespoon tomato paste
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 bay leaves

Instructions:

  1. Preheat oven to 350°F.
  2. Coat rabbit pieces in flour, salt, and pepper.
  3. Melt butter in a large oven-safe pan over medium-high heat. Add the rabbit pieces and brown on all sides for about 5 minutes.
  4. Remove rabbit from the pan and set aside.
  5. Add onion to the same pan and cook for 2 minutes until softened. Add garlic and cook for 1 additional minute.
  6. Add beef broth, beer, tomato paste, and bay leaves to the pan and bring to a boil.
  7. Return rabbit pieces to the pan and cover with the sauce.
  8. Cover the pan with foil and place in the preheated oven for 1 hour.
  9. Remove the foil and continue to cook for 15-20 minutes until the rabbit is tender and the sauce has thickened.
  10. Remove bay leaves before serving.
