Rabbit in the oven with beer sauce
Ingredients:
- 2 pounds rabbit, cut into pieces
- 4 tablespoons flour
- Salt and pepper to taste
- 4 tablespoons butter
- 2 cups beef broth
- 1 cup beer
- 1 tablespoon tomato paste
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 bay leaves
Instructions:
- Preheat oven to 350°F.
- Coat rabbit pieces in flour, salt, and pepper.
- Melt butter in a large oven-safe pan over medium-high heat. Add the rabbit pieces and brown on all sides for about 5 minutes.
- Remove rabbit from the pan and set aside.
- Add onion to the same pan and cook for 2 minutes until softened. Add garlic and cook for 1 additional minute.
- Add beef broth, beer, tomato paste, and bay leaves to the pan and bring to a boil.
- Return rabbit pieces to the pan and cover with the sauce.
- Cover the pan with foil and place in the preheated oven for 1 hour.
- Remove the foil and continue to cook for 15-20 minutes until the rabbit is tender and the sauce has thickened.
- Remove bay leaves before serving.
