Ingredients:

  • 1 rack of lamb (8 chops)
  • 2 garlic cloves, minced
  • 2 teaspoons fresh rosemary, chopped

  • 2 tablespoons olive oil

Directions:

  1. Preheat your oven to 375°F.

  4. Place the rack of lamb in a roasting pan and roast in the oven for 25-30 minutes or until the internal temperature reaches 135°F for medium-rare or 145°F for medium.
  5. Remove the lamb from the oven and let it rest for 10 minutes before slicing and serving.
