Radish Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound radishes, trimmed and sliced
  • 4 cups chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream (optional)
  • 1 tablespoon chopped fresh chives (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until soft and translucent.
  2. Add radishes to the pot and stir to combine. Cook for 5-7 minutes, or until radishes are slightly softened.
  3. Pour in chicken or vegetable broth and salt, and increase heat to high. Bring to a boil, then reduce heat to low and let simmer for about 20-25 minutes, or until radishes are fully cooked.
  4. Remove from heat and let cool slightly. Use an immersion blender or transfer to a blender and puree until smooth.
  5. Return to the pot and stir in heavy cream (if using). Reheat over low heat if necessary.
  6. Serve hot, garnished with chopped chives (if desired).
