Raisin Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup raisins

Instructions:

  1. Preheat oven to 350°F (180°C) and line a 9-inch cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. Add flour mixture to butter mixture alternating with buttermilk, beginning and ending with flour mixture. Stir until just combined.
  7. Fold in raisins.
  8. Pour batter into prepared cake pan and smooth the top with a spatula.
  9. Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Cool the cake in the pan for 10 minutes before transferring onto a wire rack.
  11. Serve warm or cold.
