Raisin Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup raisins
Instructions:
- Preheat oven to 350°F (180°C) and line a 9-inch cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla extract.
- Add flour mixture to butter mixture alternating with buttermilk, beginning and ending with flour mixture. Stir until just combined.
- Fold in raisins.
- Pour batter into prepared cake pan and smooth the top with a spatula.
- Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool the cake in the pan for 10 minutes before transferring onto a wire rack.
- Serve warm or cold.
