Rghaïf Moroccan Pancakes Recipe

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp. salt
  • 1 tbsp. sugar
  • 2 tbsp. vegetable oil
  • 1 1/4 cups lukewarm water
  • 1/2 cup vegetable oil, for frying

Instructions

  1. In a large mixing bowl, mix the flour, salt, and sugar.
  2. Add the vegetable oil and mix with a fork or your hands until the mixture resembles sand.
  3. Slowly add the lukewarm water, a little at a time, mixing until the dough comes together and forms a ball. Knead the dough for 10 minutes until it becomes smooth and elastic. Cover with a clean towel and let rest for 20 minutes.
  4. Divide the dough into 8 equal pieces. Roll each piece into a ball and place on a floured surface. Cover with a clean towel and let rest for 5 minutes.
  5. Take one dough ball and roll it out as thin as possible, into a large circle. Brush the top of the circle with vegetable oil. Fold one side of the circle to the center, brush with vegetable oil, then fold the other side to the center and brush with oil again. Fold the circle in half, brush with oil, and then fold it in half again. Flatten the dough lightly with your hands and set aside. Repeat with the remaining dough.
  6. Heat a large pan over medium heat. Add 1 tablespoon of vegetable oil. Once hot, add one folded pancake and fry for about 2-3 minutes on each side or until golden brown. Repeat with the remaining dough.
  7. Remove from pan and place on paper towels to drain excess oil.
  8. Serve warm and enjoy!
