Rhubarb Jam Recipe
Ingredients:
- 2 lbs rhubarb, sliced into small pieces
- 1 1/2 cups sugar
- 1/2 cup water
- 1 tbsp lemon juice
Instructions:
- In a large pot mix the sliced rhubarb, sugar, water and lemon juice.
- Cook over medium-high heat, stirring occasionally, until the sugar is dissolved.
- Once the sugar has dissolved, turn down the heat to medium-low and let simmer for 25-30 minutes or until the mixture has thickened and is jam-like in texture.
- Remove from heat and let cool.
- Pour the jam into jars and refrigerate overnight or until chilled.
- Enjoy!
