Rhubarb Jam Recipe

Rhubarb Jam

Ingredients:

  • 2 lbs rhubarb, sliced into small pieces
  • 1 1/2 cups sugar
  • 1/2 cup water
  • 1 tbsp lemon juice

Instructions:

  1. In a large pot mix the sliced rhubarb, sugar, water and lemon juice.
  2. Cook over medium-high heat, stirring occasionally, until the sugar is dissolved.
  3. Once the sugar has dissolved, turn down the heat to medium-low and let simmer for 25-30 minutes or until the mixture has thickened and is jam-like in texture.
  4. Remove from heat and let cool.
  5. Pour the jam into jars and refrigerate overnight or until chilled.
  6. Enjoy!
