Rice, Goat Cheese and Broccoli Salad Recipe
Ingredients:
- 1 cup uncooked white rice
- 3 cups broccoli florets
- 4 oz. crumbled goat cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tbsp. olive oil
- 2 tbsp. red wine vinegar
- 1 tbsp. honey
- Salt and black pepper
Instructions:
- Cook rice according to package directions, then set aside to cool.
