Rice, Goat Cheese and Broccoli Salad Recipe

Ingredients:

  • 1 cup uncooked white rice
  • 3 cups broccoli florets
  • 4 oz. crumbled goat cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • 1 tbsp. honey
  • Salt and black pepper

Instructions:

  1. Cook rice according to package directions, then set aside to cool.
  2. Blanch broccoli florets in boiling water for 1 minute, then immediately transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
