Roast Beef Casserole with Garrigue Herbs
Ingredients:
- 1 kg beef chuck roast, cut into cubes
- 3 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red pepper, chopped
- 1 green pepper, chopped
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 cup dry red wine
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp dried lavender
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp flour
- 2 cups cooked brown rice
Instructions:
- Preheat oven to 350°F (175°C).
- In a large dutch oven, heat 2 tbsp olive oil over medium heat.
- Season the beef with salt and pepper, then brown it in the dutch oven. Once browned, remove the beef from the dutch oven and set aside.
- Add the remaining 1 tbsp olive oil to the dutch oven and sauté the onion, garlic and peppers until softened.
- Add the tomato paste and stir well.
- Add the beef broth, red wine, thyme, rosemary, oregano, lavender and bay leaf. Stir everything together and season with salt and pepper to taste.
- Return the browned beef to the dutch oven and stir well to combine.
- Sprinkle the flour on top of the beef and vegetables and stir well again.
- Cover the dutch oven and bake in the preheated oven for 2-3 hours or until the beef is tender and the sauce is thick and bubbly.
- Serve the beef casserole hot with cooked brown rice.
