Roast Beef Casserole with Garrigue Herbs

Ingredients:

  • 1 kg beef chuck roast, cut into cubes
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 cup dry red wine
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp dried lavender
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp flour
  • 2 cups cooked brown rice

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large dutch oven, heat 2 tbsp olive oil over medium heat.
  3. Season the beef with salt and pepper, then brown it in the dutch oven. Once browned, remove the beef from the dutch oven and set aside.
  4. Add the remaining 1 tbsp olive oil to the dutch oven and sauté the onion, garlic and peppers until softened.
  5. Add the tomato paste and stir well.
  6. Add the beef broth, red wine, thyme, rosemary, oregano, lavender and bay leaf. Stir everything together and season with salt and pepper to taste.
  7. Return the browned beef to the dutch oven and stir well to combine.
  8. Sprinkle the flour on top of the beef and vegetables and stir well again.
  9. Cover the dutch oven and bake in the preheated oven for 2-3 hours or until the beef is tender and the sauce is thick and bubbly.
  10. Serve the beef casserole hot with cooked brown rice.
