Ingredients:

  • 1 wild boar, about 5-7 lbs
  • 4 cloves of garlic, chopped
  • 2 sprigs of rosemary, finely chopped
  • 1 tbsp. of thyme
  • 2 tbsp. of olive oil
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat the oven to 375°F.
  2. Clean the boar and pat it dry. Use a sharp knife to score the skin, making shallow cuts in a diamond shape.
  3. In a small bowl, mix the chopped garlic, rosemary, thyme, olive oil, salt, and pepper.
  4. Rub the mixture all over the boar, making sure to get it into the cuts in the skin.
  5. Place the boar on a roasting pan and roast for 2-3 hours, or until the internal temperature reaches 160°F. Check the internal temperature with a meat thermometer inserted into the thickest part of the meat, avoiding contact with the bone.
  6. When it’s done, let the boar rest for 15-20 minutes before carving it into slices and serving.
