Roast Wild Boar
Ingredients:
- 1 wild boar, about 5-7 lbs
- 4 cloves of garlic, chopped
- 2 sprigs of rosemary, finely chopped
- 1 tbsp. of thyme
- 2 tbsp. of olive oil
- Salt and freshly ground black pepper
Instructions:
- Preheat the oven to 375°F.
- Clean the boar and pat it dry. Use a sharp knife to score the skin, making shallow cuts in a diamond shape.
- In a small bowl, mix the chopped garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the mixture all over the boar, making sure to get it into the cuts in the skin.
- Place the boar on a roasting pan and roast for 2-3 hours, or until the internal temperature reaches 160°F. Check the internal temperature with a meat thermometer inserted into the thickest part of the meat, avoiding contact with the bone.
- When it’s done, let the boar rest for 15-20 minutes before carving it into slices and serving.
