Roasted Scallops with Chanterelles Recipe

Ingredients

  • 1 lb fresh scallops, cleaned and trimmed
  • 1/2 lb fresh chanterelle mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1/4 cup dry white wine
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with foil.
  3. Toss the scallops with olive oil and season with salt and pepper.
  4. Spread the scallops in a single layer on the prepared baking sheet and roast for 10-12 minutes, until lightly browned and cooked through.
