Roquefort Canelés Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 4 tablespoons unsalted butter
  • 2 eggs, separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup crumbled Roquefort cheese
  • 1 tablespoon chopped chives

Instructions:

  1. In a medium saucepan, heat the milk and butter over medium heat until the butter is melted.
  2. In a large bowl, whisk together the flour, egg yolks, salt, and pepper. Slowly add the warm milk mixture, whisking constantly, until the batter is smooth. Allow the batter to cool to room temperature, then stir in the Roquefort cheese and chopped chives.
  3. Preheat the oven to 425 degrees Fahrenheit. Grease a canelé mold with butter, then fill each mold with the batter. The batter should fill the molds almost to the top.
  4. Bake the canelés for 25 to 30 minutes, or until they are puffed and golden brown on the outside. Allow the canelés to cool in the molds for a few minutes before removing them and serving them warm.
