Rust – Regal Recipe

Ingredients:

  • 2 pounds of boneless beef chuck roast
  • 1 tablespoon of olive oil
  • 1 onion (diced)
  • 2 cloves of garlic (minced)
  • 1 cup of beef broth
  • 2 bay leaves
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions:

  1. Season the beef chuck with salt and pepper all over the surface of each side.
  2. Preheat oil in a large sauté pan over medium-high heat, add the beef and cook until browned on each side for about 5-7 minutes.
  3. Remove the beef and set it aside on a clean plate.
  4. In the same pan, add the onion and garlic, and cook until translucent and fragrant for about 5 minutes.
  5. Add the beef broth, bay leaves, thyme, basil, and oregano. Stir and scrape up any browned bits left from the meat, and simmer for 5-10 minutes.
  6. Return the beef to the pan and spoon the broth mixture over the top of the beef evenly.
  7. Cover and cook on low heat for about 6-8 hours or until the beef is tender and pulls apart easily with a fork.
  8. Remove the beef from the pan and let it rest for 5-10 minutes before slicing it thinly against the grain.
  9. Discard the bay leaves in the juices and spoon some of the sauce over the meat to serve.
