Ingredients:
- 1 pre-made pie crust, thawed if frozen
- 4 peaches, peeled and sliced
- 1/2 cup pistachios, roughly chopped
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 egg
- 1 tablespoon water
Directions:
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust on a lightly floured surface, and place it on a large baking sheet.
- In a large bowl, mix together the peaches, pistachios, sugar, flour, cinnamon, nutmeg, and salt.
- Spoon the peach mixture onto the center of the pie crust, leaving about 2 inches of crust around the edges.
- Gently fold the edges of the pie crust up and over the filling, pleating the edges as needed.
- In a small bowl, whisk together the egg and water to make an egg wash. Brush the edges of the pie crust with the egg wash.
