Ingredients:

  • 4 slices of bread
  • 4 oz. goat cheese
  • 1 tbsp olive oil
  • 5 oz. mixed greens
  • 1/2 red onion, thinly sliced

  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil

  • 1 tsp dijon mustard
