Salad of Green Beans, Candied Tomatoes and Grilled Feta
Ingredients:
- 1 lb of fresh green beans, trimmed and halved
- 1 cup of cherry tomatoes, halved
- 1/4 cup of olive oil
- 1 tbsp of balsamic vinegar
- 1/4 cup of honey
- 1 tsp of red pepper flakes
- 8 oz of feta cheese, cut into 1/2 inch slices
- Salt and pepper to taste
- 1/4 cup of chopped fresh parsley for garnish
Instructions:
- Preheat the oven to 375°F
- In an oven-safe dish, toss the cherry tomatoes with 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, 1/4 cup of honey, 1 teaspoon of red pepper flakes, salt and pepper.
- Bake the tomatoes in the oven for 20-25 minutes until they are slightly caramelized.
- While the tomatoes are cooking, bring a medium-sized pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender-crisp. Drain and shock in cold water to stop cooking.
- Heat a grill pan or an outdoor grill over medium-high heat. Brush the feta with olive oil on both sides to prevent sticking. Grill the feta for 2-3 minutes per side until grill marks appear.
- Arrange the green beans, candied tomatoes and grilled feta on a serving platter.
- Drizzle the remaining olive oil over the top of the salad. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
