Ingredients:

  • 250g fusilli pasta
  • 200g fresh salmon, cut into small chunks
  • 200g chorizo, sliced
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1 red pepper, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup white wine
  • 1/4 cup cream
  • 1/2 lemon, juiced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions:

  1. Begin by cooking the pasta according to the instructions on the package. Drain and set aside.
  2. Heat the olive oil in a large pan over medium-high heat. Add the chorizo and fry until infused with flavours and crispy. Remove with a slotted spoon and set aside on a paper towel to defat.
  3. In the same pan, add the garlic, red onion and red pepper, cook for a few minutes until soft.
  4. Add the salmon and cook for 3-4 minutes until golden brown.
  5. Pour in the white wine, lemon juice and cream. Stir everything until well combined and bring it to a boil, then reduce the heat and let simmer until the sauce thickens.
  6. Add the cooked pasta to the pan and toss together with the sauce and salmon. Add salt and pepper to taste.
  7. Remove from heat and sprinkle the cherry tomatoes and crispy chorizo on top. Garnish with fresh parsley.
