Salmon Chaplain with Scallops Recipe

Ingredients

  • 4 fresh salmon fillets, skin on
  • 1/2 pound of fresh scallops
  • 3 cloves of garlic, minced
  • 1/4 cup of white wine
  • 4 Tbsp of olive oil
  • 2 Tbsp of butter
  • 1 Tsp of salt
  • 1/2 Tsp of pepper
  • 2 Tsp of chopped fresh parsley
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 375°F.
  2. Season the salmon with salt and pepper on both sides.
  3. In a large pan, heat 2 Tbsp of olive oil over medium heat. Add the salmon fillets skin-side down and sear for 4-5 minutes until crispy. Flip the salmon fillets over and sear the other side for 2 minutes more. Remove from the pan and place them onto a baking dish.
  4. Add 2 Tbsp of olive oil to the same pan and saute the garlic for 30 seconds until fragrant. Add the scallops and cook for 2-3 minutes until browned. Remove from the pan and place them over the salmon fillets in the baking dish
  5. Add the white wine and 2 Tbsp of butter to the pan, stir to combine. Pour the sauce over the salmon and scallops.
  6. Garnish the dish with slices of lemon and chopped parsley.
  7. Bake the salmon for 12-15 minutes or until cooked through and the scallops are tender.
  8. Serve immediately with your favorite side and enjoy!
